Florentine Beef Stew

Ingredients (for four people):

  • 90 ml. extra virgin olive oil
  • 800 g. lean stewing steak, cubed
  • 4 garlic cloves
  • Fresh rosemary leaves
  • 175 ml. red wine
  • 500 g. ripe tomatoes, skinned and chopped
  • Salt and freshly ground black pepper

  • Heat the oil in a saucepan, add the meat, garlic and rosemary and brown the meat all over.
  • Pour the red wine over the meat and stir thoroughly, scraping the bottom of the pan to deglaze it.
  • Raise the heat and continue cooking until most of the wine has evaporated.
  • Add the tomatoes and season with salt and pepper.
  • Lower the heat, cover and simmer until the meat has become very tender; this should take just under 3 hours. Should the sauce reduce too much, add a little warm water. Make sure to stir regularly throughout the cooking time.
